Mushroom Meatball Sauce


The other night I needed to come up with dinner quick.  After searching my pantry, fridge, and freezer I found these meatballs and decided to make a strogonoff like sauce to serve over rice.  It turned out so delicious, I wished I hade made more.

Mushroom Meatball Sauce (printable version)

3 T butter
2 T chopped onion
1 can sliced mushrooms
1 clove garlic, minced
1/2 tsp salt
1/2 tsp pepper
2 T potato flour
 milk

1. In a small saucepan, melt butter.  Add onions and saute for about 3 minutes.  Drain mushrooms into a 2 C measuring cup and add mushrooms to pan.  Add garlic.  Saute for another 3 minutes.  Add Salt & pepper, stir.  Add potato flour and stir for 1 minute.
2. Add milk to mushroom juice until it measures 2 C.  Add a little milk to the flour/mushroom mixture and stir in.  Repeat until the sauce is really smooth, about 1 C will be added.  Then pour the remaining milk in.  Bring to a boil and cook 1 minute.  Add meatballs, if they are cold, cook, on low, until they are heated through, about 5 minutes. If they are warm just let sit for a couple minutes.
3. Serve over rice or noodles.
