Chocolate, Almond, Toffee Squares with Carmel Sauce


My cousin Kim is an amazing cook.  Recently, she entered these in a statewide contest and was a semi-finalist.  These bars are so good I just had to make a GF version.  If you like sticky, gooey, sweet, and delicious you must try these.  I cut the recipe in half for an 8x8 so the measurments are a little wonky, but it works great.

 Chocolate, Almond, Toffee Squares with Carmel Sauce

1 C GF Flour Blend
1/2 C + 2 T Brown Sugar
1/4 C butter (cold)
3/4 tsp baking powder
1/4 tsp salt
1/2 tsp xantham gum
1 lg egg
1/2 C milk
3/4 tsp vanilla
6 T milk chocolate chips
6 T white chips
6 T slivered almonds
6 T coconut*
6 T toffee bites
1/4 C Carmel Sauce


1. Preheat oven to 350-degrees.  Grease an 8x8 pan and set aside.
2.Combine the flour, brown sugar and cut in the butter to form small crumbs (I used my food processor).  Take out 1/2 C + 2 T of the mixture to be used as a topping later.
3. To the remaining add the baking powder, salt, xanthan gum, and stir together.  In a small bowl combine the egg, milk, and vanilla.  Fold into the crumb mixture  Mix until combined.  The mixture will not be smooth.  Pour into prepared pan.
4. Sprinkle reserved crumb mixture over the batter.  Then follow by sprinkling evenly the chocolate chips, white chips, almonds, coconut, and toffee bites.
5. Bake for 30-35 minutes or until golden brown.  Let cool for about 30 minutes then drizzle with caramel sauce.  Makes about 9-16 squares depending on whether you cut small or large squares.

*Use sweetened or unsweetened coconut.
